According to the specs the nVidia 590 can handle 6 SATA drives with RAID 0, 1, 0+1, and 5.

According the the CrossHair and M2N32-SLI Deluxe manuals, the BIOS RAID utility only talks about 4 disks for RAID 0+1.

I'd like be able to use 6 disks with 3 disks per stripe. Is this possible?

FYI: Six

It took a while and a lot of research to confirm that nVidia supports 6 drives in all modes of RAID.

Anyway, now I'm leaning to RAID 5.
